Simple Cucumber Ranch Salad

1 packet
Buttermilk Ranch Dip Mix or
Chipotle Ranch Dip Mix
3 large cucumbers, peeled & sliced
8 oz. bag matchstick carrots
1/4 - 1/2 cup chopped red onion
~ Prepare dip mix according to directions for Dip.
~ Stir together desired amount of dip with vegetables.
~ Refrigerate until ready to serve. |

Homemade Fresh Salsa

Also Try:

2 Lbs. fresh tomatoes,
peeled and diced
1 med. onion, minced
2 Tbls. chopped fresh cilantro OR 1 Tbls.
dried
cilantro
juice from 1 lime OR 2 tsp.
lime
juice powder
4 cloves garlic, minced OR 2 tsp.
dried minced garlic
1 minced fresh chili pepper or 1 tsp.
chili pepper powder
3/4 tsp.
salt
1/2 tsp.
ground cumin |
~ Stir together all ingredients in a large non-reactive
saucepan.
~ For a smooth salsa, puree all in a blender, food processor, or using a
stick blender. For a chunky salsa, proceed with the next step.
~ Bring the salsa to a simmer over medium heat, stirring often; remove
from heat.
~ Refrigerate salsa for at least 1 hour before serving, overnight is best. |

1 Lb. fresh
green beans, cut into 1" pieces
1 Lb. tomatoes, peeled and diced OR 15 oz. can diced tomatoes
1 packet
Ham
& Bean Soup Seasoning Mix |
~ Combine ingredients in a large non-reactive
saucepan over medium heat. Bring to a simmer then reduce heat to
medium-low.
~ Cover and simmer until green beans are tender, stirring often. |

Buttery Popcorn Topping
2 Tbls. hot sauce (we like
Pain is Good Habanero Garlic Hot Sauce)
1 tsp. soy sauce OR
soy sauce powder
2 cloves garlic, minced OR 1 tsp.
granulated garlic
1 tsp.
salt
4 - 8 ears of fresh corn, shucked |
~ Combine all ingredients, except corn, in a small pan
over medium heat. Heat and stir until salt has dissolved and the mixture
is hot.
~ Brush the ears of corn generously with the buttery mixture; reserve
remaining mixture.
~ Cook the corn on a preheated grill, rotating occasionally until the corn
is hot and tender, about 10 - 15 minutes. While the corn is cooking,
occasionally brush with the remaining butter. |

Balsamic Glazed Grilled Zucchini
This simple flavored oil tastes great on any vegetable. |
Also Try:

1/4 cup
olive oil
2 tsp.
soy sauce powder
2 tsp.
balsamic vinegar powder
2 tsp.
garlic pepper seasoning
fresh zucchini
~ Whisk together all ingredients except
zucchini.
~ Cut zucchini into 1/4" thick slices. |
~ Place zucchini slices onto a hot grill, brush with oil mixture, turn
slices over, and brush the opposite side with the mixture.
~ Grill 2 - 3 minutes per side, until grill marks are pronounced and zucchini is slightly limp. |
